Ingredients

  • 100g light brown sugar
  • 100g white granulated sugar
  • 1 medium egg
  • 1 tsp vanilla extract
  • 25g cocoa powder
  • 225g plain flour
  • 1/2 tsp salt
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp baking powder
  • 100g white chocolate chips
  • 100g milk chocolate chips
  • 100g dark chocolate chips

Instructions

  1. Preheat oven to 180°C (160°C fan) and line two baking trays with parchment paper.
  2. Cream together butter, light brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until fully combined.
  4. Sift in cocoa powder, flour, bicarbonate of soda, baking powder, and salt. Mix to form a thick dough.
  5. Fold in all three types of chocolate chips until evenly distributed.
  6. Using a 5 cm cookie scoop, portion dough onto trays, spacing them apart to allow spreading.
  7. Bake for 10–12 minutes until the cookies are crinkled on top and slightly soft in the center.
  8. Remove from oven and tap trays gently on the counter to flatten. Cool on the tray before serving.

  • Bake one minute less for softer cookies or one minute more for a crispier texture.
  • Store in an airtight container for up to 5 days or freeze dough for up to 3 months.
