Description

Ingredients

  • 2 sticks (1 cup) unsalted butter, at room temperature
  • 2/3 cup sugar
  • 1/4 teaspoon almond extract
  • 1/4 teaspoon pure vanilla extract
  • 1 large egg
  • 2 1/2 cups all-purpose flour, plus more for dusting
  • 1/4 teaspoon kosher salt
  • Green gel food coloring (such as leaf green)
  • Red gel food coloring (such as bright red)

Instructions

  1. Preheat oven to 350°F (175°C) and position racks in the upper and lower thirds.
  2. Beat butter and sugar with a stand mixer on medium-high speed until light and fluffy, about 5 minutes.
  3. Add almond and vanilla extracts and the egg; mix until well combined.
  4. Reduce mixer speed to low and add flour and salt; mix until just combined.
  5. Remove all but 1/4 cup of dough and set aside. Add green gel coloring to the dough in the bowl and mix on low until fully colored. Transfer to a floured surface.
  6. Place the reserved 1/4 cup dough back into the mixer and add red gel coloring; mix on low until evenly tinted.
  7. Load the cookie press barrel with alternating pieces of white, green, and red dough to create a tri-color effect.
  8. Press cookies onto ungreased baking sheets using a wreath disc.
  9. Bake for 8–10 minutes until firm but not browned. Cool on the sheet for 1 minute, then transfer to a wire rack to cool completely.
  10. Store in an airtight container for up to one week.

  • Do not chill the dough before pressing; it should be at room temperature.
  • Use gel food coloring to prevent altering the dough’s texture.
