Ingredients
Scale
- 2 tablespoons olive oil
- 1 small yellow or white onion, diced
- 2 cloves garlic, minced
- 1½ pounds ground beef
- 1 tablespoon brown sugar
- 2 tablespoons chili powder
- 1 teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon ground cumin
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon cayenne pepper (optional)
- 1 cup beef broth
- 1 (15 oz) can crushed tomatoes
- 1 (15 oz) can tomato sauce
- 1 tablespoon tomato paste
- 1 (15 oz) can black beans, drained and rinsed (optional)
- 1 (15 oz) can red kidney beans, drained and rinsed (optional)
Instructions
- Heat a Dutch oven or large pot over medium heat and add olive oil. Sauté diced onion for 3–4 minutes until translucent.
- Add minced garlic and cook for 1 more minute until fragrant.
- Add ground beef and cook until browned, about 5–6 minutes. Break it into crumbles as it cooks.
- Sprinkle in brown sugar, chili powder, onion powder, garlic powder, cumin, salt, black pepper, and cayenne. Stir for 30 seconds to toast the spices.
- Pour in beef broth, crushed tomatoes, tomato sauce, and tomato paste. Stir well to combine.
- Add beans (if using) and stir to incorporate.
- Bring to a simmer, reduce heat to low, and cook uncovered for 25–30 minutes, stirring occasionally.
- Serve hot with toppings like shredded cheddar cheese, sour cream, red onions, or tortilla chips.
Notes
- For thicker chili, simmer longer or add 1 tbsp of masa harina.
- To make it spicier, increase cayenne or add diced jalapeños.
- Store leftovers in the fridge for up to 4 days or freeze for 4–6 months.
- This chili is even better the next day as the flavors meld overnight.
- To make it no-bean, simply omit both types of beans — no other changes needed.
