Instructions

  1. In a medium bowl, whisk flour, baking powder, and salt. Set aside.
  2. In a large bowl, beat softened butter and sugar on high speed for about 3 minutes until light and creamy.
  3. Add egg, vanilla, and almond extract (if using). Beat until fully combined.
  4. Add dry ingredients to wet mixture. Mix on low speed until a soft dough forms. If sticky, add 1 more tablespoon of flour.
  5. Divide dough in half. Roll each half to 1/4 inch thickness on parchment paper or silicone baking mat.
  6. Stack rolled dough with parchment between layers and refrigerate for at least 2 hours.
  7. Preheat oven to 350°F (177°C). Line baking sheets with parchment or silicone mats.
  8. Cut chilled dough into shapes. Re-roll scraps and cut again.
  9. Place cookies 3 inches apart and bake for 11–12 minutes until edges are lightly browned.
  10. Cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely.
  11. Decorate cooled cookies with icing and sprinkles. Let icing set before serving or storing.
