- 1 cup fresh strawberries (for glaze)

Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a donut pan with baking spray.
- In a medium bowl, whisk together cake flour, granulated sugar, baking powder, and salt until well combined.
- In another bowl or measuring cup, whisk together buttermilk, melted butter, egg, lemon juice, and vanilla extract until smooth.
- Pour the wet ingredients into the bowl with the dry ingredients and mix gently until just combined. Do not overmix.
- Fold the chopped strawberries into the batter carefully so they are evenly distributed.
- Spoon the batter into the prepared donut pan, filling each cavity about two-thirds full.
- Bake for 8–10 minutes or until the donuts spring back lightly when touched.
- Allow the donuts to cool in the pan for 1 minute, then transfer them to a cooling rack to cool completely.
- To make the glaze, blend the fresh strawberries and powdered sugar in a blender or food processor until smooth.
- If the glaze is too thin, add powdered sugar one tablespoon at a time until it reaches a thick coating consistency.
- Dip each cooled donut into the strawberry glaze and place on a rack.
- Allow the glaze to set for about 20 minutes before serving.
