  • 1/3 cup + 1 tablespoon granulated sugar

  • 1/3 cup + 1 tablespoon buttermilk
  • Juice of 1/2 fresh lemon
  • 1 tablespoon unsalted butter, melted and slightly cooled
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup fresh strawberries, finely chopped
  • 1 cup fresh strawberries (for glaze)
  • 2 cups powdered sugar (for glaze)

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a donut pan with baking spray.
  2. In a medium bowl, whisk together cake flour, granulated sugar, baking powder, and salt until well combined.
  3. In another bowl or measuring cup, whisk together buttermilk, melted butter, egg, lemon juice, and vanilla extract until smooth.
  4. Pour the wet ingredients into the bowl with the dry ingredients and mix gently until just combined. Do not overmix.
  5. Fold the chopped strawberries into the batter carefully so they are evenly distributed.
  6. Spoon the batter into the prepared donut pan, filling each cavity about two-thirds full.
  7. Bake for 8–10 minutes or until the donuts spring back lightly when touched.
  8. Allow the donuts to cool in the pan for 1 minute, then transfer them to a cooling rack to cool completely.
  9. To make the glaze, blend the fresh strawberries and powdered sugar in a blender or food processor until smooth.
  10. If the glaze is too thin, add powdered sugar one tablespoon at a time until it reaches a thick coating consistency.
  11. Dip each cooled donut into the strawberry glaze and place on a rack.
  12. Allow the glaze to set for about 20 minutes before serving.

  • Do not overmix the batter to keep the baked donuts soft and tender.
  • Chop strawberries into small pieces to avoid excess moisture in the batter.
