  • 2 tablespoons olive oil – divided use

  • 1 teaspoon salt – divided use
  • 1 teaspoon pepper – divided use
  • 1 teaspoon garlic powder – divided use

Instructions

  1. Heat a large cast iron skillet over medium heat for a few minutes until hot.
  2. Add 1 tablespoon olive oil and 1 tablespoon garlic herb butter. Once melted, add the diced Yukon Gold potatoes.
  3. Season potatoes with ½ teaspoon salt, ½ teaspoon pepper, and ½ teaspoon garlic powder. Cover and cook for 10–12 minutes, stirring occasionally until golden and fork-tender.
  4. While the potatoes cook, season steak cubes with remaining salt, pepper, and garlic powder.
  5. Push cooked potatoes to one side of the skillet (or remove them). Add remaining olive oil and butter to the other side and increase heat to medium-high.
  6. Add steak bites and sear for 3–4 minutes per side until browned and cooked to your desired doneness. Cook in batches if needed to avoid overcrowding.
  7. Lower the heat to medium-low, return potatoes to the pan, and toss everything in the melted garlic butter until evenly coated.
  8. Taste and adjust seasoning if necessary, then serve hot.
