Description

Ingredients

  • 2 cups fresh ricotta cheese (around 475g)
  • Grated zest from half a lemon
  • Juice from half a lemon
  • 1/4 teaspoon salt
  • A dash of black pepper
  • 1 tablespoon olive oil
  • 1/4 cup runny honey
  • 1 teaspoon spicy sauce (like sriracha)
  • 1/2 teaspoon crushed chili flakes
  • 1 to 2 teaspoons freshly chopped rosemary
  • 1/4 cup walnuts, chopped

Instructions

  1. Let the ricotta come to room temperature for about 30 minutes before starting.
  2. In a food processor or high-speed blender, combine ricotta, lemon zest, lemon juice, salt, pepper, and olive oil.
  3. Blend on high until smooth and creamy (1–2 minutes), then spread into a shallow bowl.
  4. In a small bowl, mix honey, spicy sauce, and chili flakes until well combined.
  5. Gently warm the honey mixture over low heat if needed, just until runny and blended.
  6. Drizzle the hot honey over the whipped ricotta.
  7. Top with chopped walnuts and fresh rosemary.
  8. Serve with crostini, crackers, or fresh vegetables, and enjoy!

Notes

  • Strain ricotta through cheesecloth if it’s too watery.
  • Use hot honey if already on hand and skip making your own.
  • Fresh herbs like thyme or sage can replace rosemary.
