  • 1/2 cup unsalted butter, softened

  • 1/2 cup brown sugar, packed
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon (plus extra for coating)
  • 1/4 teaspoon salt

Instructions

  1. In a small bowl, mix sugar and cinnamon for the coating. Set aside.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add pumpkin purée, egg yolk, and vanilla extract. Beat until smooth.
  4. In another bowl, whisk together flour, baking soda, pumpkin pie spice, cinnamon, and salt.
  5. Gradually mix dry ingredients into wet ingredients until just combined.
  6. Cover and refrigerate dough for at least 30 minutes to firm up.
  7. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  8. Scoop tablespoon-sized portions of dough, roll into balls, and coat in the cinnamon-sugar mixture.
  9. Place cookies on prepared baking sheet and bake for 9–11 minutes, until edges are set but centers appear slightly underbaked.
  10. Cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
