Description

Slow Cooker Beef Tips with Gravy is a comforting, family-friendly recipe featuring tender chunks of top sirloin slow-cooked in a rich, savory gravy. Perfect served over mashed potatoes, rice, or noodles for a cozy and hearty meal any night of the week.

Ingredients

Scale
  • 3 pounds top sirloin steak, cubed: lean and flavorful base
  • 3 tablespoons vegetable oil, divided: for searing beef
  • 1 teaspoon Lawry’s Seasoned Salt, divided: adds savory depth
  • Freshly ground black pepper, to taste: enhances flavor
  • 2 cups low-sodium beef broth: gravy base
  • 1 tablespoon Worcestershire sauce: adds umami and tang
  • 1 teaspoon Italian seasoning: herbal depth
  • 1 teaspoon dried thyme: earthy note
  • 1 cup diced onion: sweetness and aroma
  • 1 tablespoon minced garlic: bold and aromatic
  • 1 bay leaf: subtle herbal flavor
  • 3 tablespoons water: used in slurry
  • 2 tablespoons cornstarch: thickens the gravy

Instructions

  1. Heat 2 tablespoons oil in a heavy skillet over medium-high heat. Add half the beef cubes, season with half the seasoned salt and pepper, and sear until browned. Transfer to slow cooker.
  2. Repeat with remaining oil and beef. Transfer all browned beef to slow cooker.
  3. Pour beef broth and Worcestershire sauce over the beef in the slow cooker.
  4. Sprinkle with Italian seasoning and thyme. Add diced onion, minced garlic, and tuck in the bay leaf.
  5. Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until beef is fork-tender.
  6. Mix cornstarch with water to form a slurry. Stir into the slow cooker during the last 10 minutes of cooking.
  7. Let the gravy thicken, then remove bay leaf and serve hot over mashed potatoes, rice, or noodles.

Notes

  • Do not skip the searing step — it enhances flavor and texture.
  • Use chuck roast as a substitute for sirloin if needed.
  • Arrowroot powder can replace cornstarch for a gluten-free version.
  • Leftovers keep well refrigerated for up to 4 days.
  • Freeze in airtight containers for up to 2 months.
