Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang for easy removal.
- In a mixing bowl, combine melted butter and sugar. Whisk until smooth.
- Add eggs one at a time, then stir in vanilla extract and red food coloring.
- Sift in cocoa powder, flour, and salt. Fold gently until just combined.
- In a separate bowl, beat softened cream cheese with 1/4 cup sugar until smooth.
- Add egg and vanilla extract to the cream cheese mixture and beat until creamy and lump-free.
- Pour 3/4 of the red velvet batter into the prepared pan and smooth evenly.
- Spread the cheesecake layer over the brownie batter.
- Dollop remaining red velvet batter on top and swirl with a knife or toothpick for a marbled effect.
- Bake for 30–35 minutes, or until the center is set and a toothpick comes out with moist crumbs.
- Cool completely in the pan on a wire rack. Chill for 30 minutes for cleaner cuts.
- Slice into squares and serve as is or with whipped cream or chocolate drizzle.
