Instructions

  1. Combine raspberries and sugar in a bowl. Let sit for 10–15 minutes to soften and release juices.
  2. Blend the raspberries until smooth, then strain through a fine mesh sieve to remove seeds. Set aside purée.
  3. In a medium saucepan, combine milk and cream. Heat over medium heat until it simmers, but do not boil.
  4. Remove from heat, add chopped white chocolate, and whisk until melted and smooth.
  5. Stir in raspberry purée, vanilla extract, and a pinch of salt. Mix well.
  6. Pour into mugs and serve hot, topped with whipped cream and fresh raspberries if desired.
