- ¾ cup (94 g) all-purpose flour
- ¼ cup (50 g) light brown sugar, packed
- ¼ teaspoon kosher salt
- 5 tablespoons unsalted butter, melted
Instructions
- Preheat oven to 350°F (175°C) and line a 9×9-inch baking dish with parchment paper.
- In a bowl, mix graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand. Press into the bottom of the pan.
- In another bowl, beat cream cheese until smooth. Add eggs, sugar, vanilla, and salt, mixing until creamy.
- Spread the cheesecake filling evenly over the crust.
- Scatter fresh raspberries on top, pressing them slightly into the filling.
- For the crumble, combine flour, brown sugar, and salt. Add melted butter and mix until crumbly.
- Sprinkle the crumble mixture evenly over the raspberries.
- Bake for 35–40 minutes, or until the center is set and the topping is golden brown.
- Cool completely at room temperature for 1 hour, then refrigerate for at least 1–2 hours before slicing.
