  • 2 cups (250 g) fresh raspberries
  • ¾ cup (94 g) all-purpose flour
  • ¼ cup (50 g) light brown sugar, packed
  • ¼ teaspoon kosher salt
  • 5 tablespoons unsalted butter, melted

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×9-inch baking dish with parchment paper.
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand. Press into the bottom of the pan.
  3. In another bowl, beat cream cheese until smooth. Add eggs, sugar, vanilla, and salt, mixing until creamy.
  4. Spread the cheesecake filling evenly over the crust.
  5. Scatter fresh raspberries on top, pressing them slightly into the filling.
  6. For the crumble, combine flour, brown sugar, and salt. Add melted butter and mix until crumbly.
  7. Sprinkle the crumble mixture evenly over the raspberries.
  8. Bake for 35–40 minutes, or until the center is set and the topping is golden brown.
  9. Cool completely at room temperature for 1 hour, then refrigerate for at least 1–2 hours before slicing.
