Description

  • 2 ½ cups (320g) all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon fine salt
  • 2 sticks (227g) unsalted butter, room temperature
  • 1 ¾ cups (350g) granulated sugar
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 2 teaspoons vanilla extract
  • 1 ½ cups (24g) freeze-dried strawberries, ground to powder
  • ½ cup granulated sugar (for rolling)
  • Pink food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a blender or food processor, pulse freeze-dried strawberries into a fine powder.
  3. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  4. In a stand mixer, beat butter for 1 minute until creamy. Add granulated sugar and beat for 3 minutes until light and fluffy.
  5. Add the egg, egg yolk, and vanilla extract. Mix until fully incorporated.
  6. Gradually add dry ingredients on low speed. When mostly combined, add strawberry powder and pink food coloring (if using). Fold with a spatula until evenly pink.
  7. Scoop 1½ tablespoon portions of dough, roll into balls, and coat with granulated sugar. Place on a tray lined with parchment.
  8. Chill dough balls in the fridge for at least 20 minutes.
  9. Bake 4–6 cookies at a time for 11–12 minutes. Cookies should be puffed with set edges. Let them cool on the tray to finish baking and crackle on top.
