Ingredients
Scale
- 1 cup finely chopped white onion
- 1 medium jalapeño or serrano pepper, ribs and seeds removed, finely chopped
- 1/4 cup lime juice
- 3/4 teaspoon fine sea salt, more to taste
- 1 1/2 pounds ripe red tomatoes, chopped
- 1/2 cup finely chopped fresh cilantro
Instructions
- In a medium bowl, combine chopped onion, jalapeño, lime juice, and salt. Let it marinate for 5 minutes.
- While it marinates, chop the tomatoes and cilantro finely.
- Add chopped tomatoes and cilantro to the bowl and stir well to combine.
- Taste and adjust salt or lime juice as needed.
- Let the mixture sit for 15 minutes before serving to enhance the flavors.
- Serve with a slotted spoon to avoid excess tomato juice.
Notes
- Use ripe, red tomatoes for best flavor — avoid pale or mealy ones.
- Cherry tomatoes are a great substitute in winter months.
- You can store Pico de Gallo in the refrigerator for up to 4 days.
- For extra flavor, let the mixture marinate longer before serving.
- Add diced avocado, red bell pepper, or fruit for variations.
