Description

These pecan pie truffles are a no-bake, bite-sized treat that captures the rich, nutty, and sweet flavors of traditional pecan pie. Coated in smooth dark chocolate and made with toasted pecans, maple syrup, and graham crackers, they’re perfect for holidays, gifting, or everyday indulgence.

  • 1 tablespoon coconut oil (optional): Helps chocolate melt evenly and adds shine

Instructions

  1. Toast pecans in a dry skillet over medium heat for 5–7 minutes, stirring until fragrant. Let them cool completely.
  2. In a food processor, combine pecans, graham crackers, and brown sugar. Pulse until finely ground.
  3. Add maple syrup, bourbon, vanilla extract, and salt. Blend until the mixture sticks together when pressed.
  4. Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
  5. Freeze the balls for at least 2 hours to firm up before dipping.
  6. Melt dark chocolate and coconut oil (if using) in a microwave or double boiler until smooth.
  7. Dip each frozen truffle into the chocolate, letting excess drip off. Return to the parchment-lined sheet.
  8. Let the chocolate coating set at room temperature or refrigerate until firm.
  9. Store truffles in an airtight container in the fridge for up to 2 weeks or freeze for longer storage.

Notes

  • To make these vegan, use vegan dark chocolate and ensure all other ingredients are plant-based.
  • If the mixture is too dry, add a bit more maple syrup; if too wet, add extra graham cracker crumbs.
