Description
Crispy, cheesy, and juicy Parmesan-Crusted Chicken that’s ready in under 30 minutes. Perfect for a quick dinner or family-friendly meal, this recipe delivers golden, crunchy chicken cutlets packed with bold parmesan flavor.
Ingredients
Scale
- 2 boneless skinless chicken breasts: sliced horizontally for thinner cutlets
- Salt and pepper to taste: enhances the natural flavor of the chicken
- 1/3 cup flour: helps the egg mixture adhere to the chicken
- 2 eggs: acts as a binding agent for the coating
- 1 cup finely shredded parmesan cheese: adds bold, nutty flavor and crispiness
- 1 cup panko breadcrumbs: creates an extra crispy texture
- 1 teaspoon garlic powder: infuses subtle garlicky flavor
- 1 teaspoon Italian seasoning: adds savory herb flavor to the coating
- 4 tablespoons vegetable oil: high smoke point oil for frying
Instructions
- Place chicken breast halves between parchment paper or plastic wrap and pound to 1/4 inch thickness. Season both sides with salt and pepper.
- Set up three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of parmesan, panko breadcrumbs, garlic powder, and Italian seasoning.
- Coat each chicken piece in flour, shaking off excess. Dip in the egg mixture to coat completely. Press into the parmesan-panko mixture for an even coating.
- Heat 2 tablespoons of vegetable oil in a skillet over medium heat. Fry chicken in batches for 3-4 minutes per side until golden brown and internal temperature reaches 165°F.
- Transfer cooked chicken to a 200°F oven to keep warm while cooking remaining pieces. Add additional oil to the pan as needed.
- Serve hot, optionally garnished with fresh parsley and lemon wedges.
Notes
- Pound chicken evenly for consistent cooking and to avoid burnt coating.
- Freshly grated parmesan provides the best flavor and crisp texture.
- Don’t overcrowd the pan; cook in batches for proper crispiness.
- For a lighter option, bake at 400°F for 15-20 minutes, flipping halfway.
- Store leftovers in the fridge for up to 5 days or freeze for 3 months.
