  • 1 teaspoon pepper (divided use)
  • 1 teaspoon garlic powder (divided use)

Instructions

  1. Heat a large cast iron skillet over medium heat. Add 1 tablespoon olive oil and 1 tablespoon garlic herb butter.
  2. Once the butter melts, add the potatoes and season with ½ teaspoon garlic powder, ½ teaspoon salt, and ½ teaspoon pepper. Cover and cook for 10–12 minutes, stirring occasionally, until fork-tender and golden brown.
  3. While the potatoes cook, season the steak bites with the remaining salt, pepper, and garlic powder.
  4. Push cooked potatoes to one side of the skillet (or remove them temporarily). Add remaining olive oil and garlic butter, then increase heat to medium-high.
  5. Add the steak bites and sear for 3–4 minutes per side until browned and cooked to desired doneness. Avoid overcrowding the pan; cook in batches if needed.
  6. Lower heat to medium-low, return potatoes to the skillet, and toss everything together in melted garlic butter until evenly coated.
  7. Taste and adjust seasoning as needed. Serve immediately while hot and glossy.
