- 2 tablespoons garlic herb butter (divided use)

- 1 teaspoon pepper (divided use)
- 1 teaspoon garlic powder (divided use)
Instructions
- Heat a large cast iron skillet over medium heat. Add 1 tablespoon olive oil and 1 tablespoon garlic herb butter.
- Once the butter melts, add the potatoes and season with ½ teaspoon garlic powder, ½ teaspoon salt, and ½ teaspoon pepper. Cover and cook for 10–12 minutes, stirring occasionally, until fork-tender and golden brown.
- While the potatoes cook, season the steak bites with the remaining salt, pepper, and garlic powder.
- Push cooked potatoes to one side of the skillet (or remove them temporarily). Add remaining olive oil and garlic butter, then increase heat to medium-high.
- Add the steak bites and sear for 3–4 minutes per side until browned and cooked to desired doneness. Avoid overcrowding the pan; cook in batches if needed.
- Lower heat to medium-low, return potatoes to the skillet, and toss everything together in melted garlic butter until evenly coated.
- Taste and adjust seasoning as needed. Serve immediately while hot and glossy.
