No-Bake Sticky Toffee Balls: The Ultimate Easy Dessert Treat

  • Author: Alice Barry
  • Total Time: 1 hour 20 minutes (includes chilling time)
  • Yield: About 30 balls 1x
  • Diet: Vegetarian

Description

These No-Bake Sticky Toffee Balls are a quick, chewy dessert inspired by the classic British sticky toffee pudding. Made with dates, brown sugar, walnuts, and graham crackers, they offer rich caramel flavor and a soft, fudgy texture without the need for baking. Perfect for holidays, snacks, or gifting.

Ingredients

Scale
  • 1 cup pitted dates (about 5 ounces): provides natural sweetness and chewy texture
  • 1/4 cup packed light brown sugar: adds rich toffee flavor
  • 2 tablespoons unsalted butter: gives smoothness and richness
  • 1 cup walnuts: adds crunch and nutty depth
  • 1 teaspoon orange zest: brightens the flavor
  • 1 teaspoon pure vanilla extract: enhances the caramel aroma
  • Pinch fine salt: balances sweetness
  • 4 whole graham crackers, broken into pieces: adds structure and mild honey flavor
  • Colored sanding sugar (or confectioners’ sugar with cinnamon): for rolling and decoration

Instructions

  1. In a microwave-safe bowl, combine dates, brown sugar, and butter. Cover and microwave on high in 1-minute intervals, stirring each time until the butter has melted and the mixture softens.
  2. Transfer the mixture to a food processor and pulse until smooth and sticky.
  3. Add walnuts, orange zest, vanilla extract, salt, and graham cracker pieces. Pulse until the mixture forms a dense, tacky dough.
  4. Scoop heaping teaspoonfuls of the mixture and roll into small balls using your hands.
  5. Place the rolled balls on a tray and refrigerate for about 1 hour until firm.
  6. Roll the chilled balls in colored sanding sugar or a mixture of confectioners’ sugar and cinnamon to coat.
  7. Store in an airtight container in the refrigerator for up to 3 days.

Notes

  • Roll the balls in sugar before chilling for a smoother coating.
  • Use Medjool dates for a softer texture and deeper flavor.
  • Add spices like cinnamon or cardamom for festive warmth.
  • Can be made vegan by replacing butter with coconut oil.
  • Serve with coffee or tea for an easy dessert pairing.
