Ingredients

  • 1 teaspoon vanilla extract
  • ¼ cup mini chocolate chips
  • 2 tablespoons chopped peanuts
  • 2 tablespoons unsweetened shredded coconut
  • Pinch of sea salt (optional)

Instructions

  1. In a large bowl, combine the oats, peanut butter, flaxseed, honey, vanilla extract, chocolate chips, chopped peanuts, and shredded coconut. Add a pinch of sea salt if using unsalted peanut butter.
  2. Mix well until the mixture is thick and evenly combined. If too dry, add water ½ teaspoon at a time until the mixture holds together when pinched.
  3. Use a 2-tablespoon scoop to portion the mixture, then roll into balls using your hands.
  4. Place the balls on a baking sheet or plate and chill in the refrigerator for 1 to 2 hours, or until firm.
