Instructions

  1. Whisk together flour, baking soda, and salt in a medium bowl. In a separate bowl, mix mint and vanilla extracts with the egg.
  2. Beat butter, granulated sugar, and confectioners’ sugar together until creamy and smooth.
  3. Slowly add the egg mixture to the butter mixture, then incorporate the flour blend in two additions until a soft dough forms.
  4. Divide dough into two equal portions, flatten into squares, wrap in plastic, and chill for at least 3 hours or overnight.
  5. Preheat oven to 350°F and line two baking sheets with parchment paper.
  6. Roll out one dough portion on floured parchment to 1/4-inch thickness. Cut out Christmas tree shapes using a 2-inch cutter.
  7. Place cookies 1 inch apart on prepared sheets. Freeze for 10 minutes to maintain shape.
  8. Bake for 18–20 minutes, rotating sheets halfway through, until edges turn light golden brown. Cool on racks completely.
  9. For icing, beat confectioners’ sugar, meringue powder, and 3 tablespoons water until thick and glossy. Add green and red coloring to create a deep green hue.
