Ingredients
Scale
- 2 unbaked pie crusts: buttery base for structure and crisp texture
- 4 large eggs: create a rich and creamy filling
- 1/2 cup whole milk: adds lightness and moisture
- 1/2 cup heavy cream: enhances creaminess and flavor
- 1/4 teaspoon salt: balances overall taste
- 1/4 teaspoon black pepper: adds subtle spice
- 3/4 cup assorted add-ins (e.g., bacon, spinach, mushrooms, ham): flavor variety
- 1/2 cup shredded or crumbled cheese (e.g., cheddar, Swiss, feta, gruyere): creamy and melty richness
Instructions
- Prepare the pie dough ahead of time and chill for at least 2 hours.
- In a bowl, whisk together eggs, milk, heavy cream, salt, and pepper until fully combined. Chill the mixture while preparing the crusts.
- Preheat oven to 375°F (190°C). Grease two 24-count mini muffin pans with nonstick spray.
- Roll out chilled dough on a floured surface and cut into 2.5-inch circles. Fit each circle into the muffin pan, pressing up the sides.
- Pour the egg mixture into each crust, filling nearly to the top.
- Top with your choice of add-ins and sprinkle cheese over each quiche.
- Bake for 25–28 minutes, until centers are set and crusts are golden brown.
- Cool for 5 minutes before removing from the pan. Serve warm or at room temperature.
Notes
- You can make these crustless by skipping the dough and baking the filling directly in greased muffin cups.
- Mini Quiche Bites freeze well for up to 3 months. Reheat at 300°F for 15 minutes.
- Mix and match ingredients—try ham and Swiss, spinach and cheddar, or veggie and feta.
- Ensure dough and filling are cold for flakier crusts and smoother texture.
