Instructions

  1. Prepare the pie dough ahead of time and chill for at least 2 hours.
  2. In a bowl, whisk together eggs, milk, heavy cream, salt, and pepper until fully combined. Chill the mixture while preparing the crusts.
  3. Preheat oven to 375°F (190°C). Grease two 24-count mini muffin pans with nonstick spray.
  4. Roll out chilled dough on a floured surface and cut into 2.5-inch circles. Fit each circle into the muffin pan, pressing up the sides.
  5. Pour the egg mixture into each crust, filling nearly to the top.
  6. Top with your choice of add-ins and sprinkle cheese over each quiche.
  7. Bake for 25–28 minutes, until centers are set and crusts are golden brown.
  8. Cool for 5 minutes before removing from the pan. Serve warm or at room temperature.

Notes

  • You can make these crustless by skipping the dough and baking the filling directly in greased muffin cups.
