Description

Mini cucumber sandwiches are a light, refreshing, and elegant finger food perfect for tea parties, baby showers, bridal showers, or casual gatherings. Made with soft bread, herbed cream cheese spread, and crisp cucumber slices, they are easy to prepare and always a crowd favorite.

Ingredients

Scale
  • 8 slices soft white or whole wheat bread
  • 1 large English cucumber, thinly sliced
  • 4 oz cream cheese, softened
  • 2 tbsp mayonnaise
  • 1 tbsp fresh dill, finely chopped
  • 1 tbsp fresh chives, finely chopped
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. In a medium bowl, combine the softened cream cheese, mayonnaise, dill, chives, salt, and black pepper. Mix until smooth and creamy.
  2. Thinly slice the cucumber using a sharp knife or mandoline, then pat the slices dry with paper towels to remove excess moisture.
  3. Trim the crusts from the bread slices for a classic tea sandwich presentation.
  4. Spread a thin, even layer of the cream cheese mixture onto each slice of bread.
  5. Arrange cucumber slices in a single layer over half of the bread slices.
  6. Top with the remaining bread slices, cream cheese side down, and gently press together.
  7. Cut sandwiches into quarters or use a round cookie cutter for decorative shapes.
  8. Serve immediately or refrigerate for up to 4 hours, covered with a damp paper towel to maintain freshness.

Notes

  • Dry cucumber slices well to prevent soggy sandwiches.
  • Room-temperature cream cheese spreads more easily and prevents bread from tearing.
  • Assemble sandwiches close to serving time for best texture.
  • Use gluten-free bread or vegan cream cheese for dietary adaptations.
