  • 6 large ripe tomatoes
  • 2 cans tuna in olive oil, drained (about 300 g)
  • 1/2 cup Kalamata olives, pitted and chopped
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons capers, drained
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh basil, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, minced
  • 1/4 teaspoon black pepper

Instructions

  1. Wash the tomatoes and pat them dry. Slice off the tops and carefully scoop out the seeds and pulp to create hollow tomato shells.
  2. Place the hollowed tomatoes upside down on paper towels for about 5 minutes to remove excess moisture.
  3. In a mixing bowl, add the drained tuna and gently break it into flakes using a fork.
  4. Add chopped Kalamata olives, finely chopped red onion, capers, parsley, and basil to the tuna.
  5. Crumble the feta cheese into the mixture and stir gently to combine.
  6. Drizzle olive oil and lemon juice over the tuna mixture, then add minced garlic and black pepper.
  7. Mix everything together until the filling is well combined but still slightly chunky.
  8. Taste the mixture and adjust seasoning if needed.
  9. Spoon the tuna mixture evenly into the hollowed tomatoes, slightly mounding the filling on top.
  10. Arrange the stuffed tomatoes on a serving platter and chill in the refrigerator for about 20–30 minutes before serving.
  11. Garnish with additional chopped parsley or basil and a drizzle of olive oil before serving.
