- 2 tablespoons fresh basil, chopped
- 1/4 cup feta cheese, crumbled
- 2 tablespoons extra virgin olive oil
- 1 tablespoon fresh lemon juice
- 1 clove garlic, minced
- 1/4 teaspoon black pepper
Instructions
- Wash the tomatoes and pat them dry. Slice off the tops and carefully scoop out the seeds and pulp to create hollow tomato shells.
- Place the hollowed tomatoes upside down on paper towels for about 5 minutes to remove excess moisture.
- In a mixing bowl, add the drained tuna and gently break it into flakes using a fork.
- Add chopped Kalamata olives, finely chopped red onion, capers, parsley, and basil to the tuna.
- Crumble the feta cheese into the mixture and stir gently to combine.
- Drizzle olive oil and lemon juice over the tuna mixture, then add minced garlic and black pepper.
- Mix everything together until the filling is well combined but still slightly chunky.
- Taste the mixture and adjust seasoning if needed.
- Spoon the tuna mixture evenly into the hollowed tomatoes, slightly mounding the filling on top.
- Arrange the stuffed tomatoes on a serving platter and chill in the refrigerator for about 20–30 minutes before serving.
- Garnish with additional chopped parsley or basil and a drizzle of olive oil before serving.
