- 1/2 cup red onion, finely chopped
- 1 cup cherry tomatoes, halved
- 1 cucumber, peeled, seeded, and diced
- 1/2 cup Kalamata olives, pitted and halved
- 4 ounces feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup olive oil
- 3 tablespoons lemon juice
- 1 clove garlic, minced
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Drain and rinse the chickpeas thoroughly, then pat them dry with a clean towel.
- Finely chop the red onion, halve the cherry tomatoes, dice the cucumber, and slice the Kalamata olives.
- In a small bowl or jar, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper until emulsified.
- In a large bowl, combine chickpeas, red onion, tomatoes, cucumber, olives, crumbled feta, parsley, and mint.
