  • 1/2 cup red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, peeled, seeded, and diced
  • 1/2 cup Kalamata olives, pitted and halved
  • 4 ounces feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Drain and rinse the chickpeas thoroughly, then pat them dry with a clean towel.
  2. Finely chop the red onion, halve the cherry tomatoes, dice the cucumber, and slice the Kalamata olives.
  3. In a small bowl or jar, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper until emulsified.
  4. In a large bowl, combine chickpeas, red onion, tomatoes, cucumber, olives, crumbled feta, parsley, and mint.
  5. Pour the dressing over the salad and toss gently to combine without crushing the feta.
  6. Serve immediately or refrigerate for 1–3 hours to allow flavors to meld. Garnish with extra feta and herbs if desired.
