Instructions

  1. Preheat oven to 375°F. Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a stand mixer fitted with a paddle attachment, beat butter and sugar on medium-high speed for about 3 minutes until light and fluffy.
  4. Add egg and vanilla extract; beat until well combined, scraping down the sides as needed.
  5. Gradually add the dry ingredients on low speed and mix until a dough forms.
  6. Divide dough in half. Leave one half plain; add blue gel food coloring to the other and mix until evenly colored.
  7. Using a large spoon or ice cream scoop, alternate scooping portions of plain and blue dough into a bowl to create a marbled effect. Gently mix and freeze for 20 minutes.
  8. Scoop 12 balls (about 1/4 cup each) of dough. Flatten each and place half a marshmallow in the center. Fold dough over and pinch to seal. Roll into a smooth ball.
  9. Roll tops of dough balls in blue sprinkles. Chill formed cookies in the fridge for 15 minutes.
  10. Bake for 15–20 minutes, or until edges are golden. Allow to cool on the baking sheet for 5–10 minutes before serving.

Notes

  • Chilling the dough twice helps maintain the cookie shape and keeps marshmallows from leaking.
  • Be sure to fully seal the marshmallows inside the dough before baking.
