  • 3 cloves garlic, minced
  • 1 cup chicken stock
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon chili flakes
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 1/3 cup sun-dried tomatoes, chopped
  • 1 tablespoon fresh basil leaves, chopped

Instructions

  1. Season the chicken cutlets with salt and black pepper, then dredge them lightly in flour, shaking off any excess.
  2. Heat olive oil and butter in a large skillet over medium heat until melted and hot.
  3. Sear the chicken cutlets for 4–5 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
  4. Add minced garlic to the same skillet and sauté for about 1 minute until fragrant.
  5. Pour in the chicken stock and deglaze the pan, scraping up any browned bits from the bottom.
  6. Lower the heat and stir in the heavy cream and parmesan cheese. Let the sauce simmer for 2–3 minutes until slightly thickened.
  7. Season the sauce with chili flakes, oregano, thyme, salt, and pepper to taste.
  8. Add the sun-dried tomatoes and return the chicken to the skillet, spooning sauce over the top.
  9. Simmer for another 5 minutes until the sauce thickens and the chicken is heated through.
  10. Garnish with fresh basil and serve warm over pasta, rice, or vegetables.

Notes

  • Use freshly grated parmesan cheese for the best texture and flavor.
  • Do not substitute heavy cream with light cream, as the sauce will not thicken properly.
  • Add a splash of chicken stock when reheating leftovers to loosen the sauce.
  • Sun-dried tomato oil can be used for extra flavor when sautéing the garlic.
