Ingredients
Scale
- 3 boneless skinless chicken breasts, sliced into cutlets
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 6 tablespoons all-purpose flour
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 cup chicken stock
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1 teaspoon chili flakes
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried thyme
- 1/3 cup sun-dried tomatoes, chopped
- 1 tablespoon fresh basil leaves, chopped
Instructions
- Season the chicken cutlets with salt and black pepper, then dredge them lightly in flour, shaking off any excess.
- Heat olive oil and butter in a large skillet over medium heat until melted and hot.
- Sear the chicken cutlets for 4–5 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
- Add minced garlic to the same skillet and sauté for about 1 minute until fragrant.
- Pour in the chicken stock and deglaze the pan, scraping up any browned bits from the bottom.
- Lower the heat and stir in the heavy cream and parmesan cheese. Let the sauce simmer for 2–3 minutes until slightly thickened.
- Season the sauce with chili flakes, oregano, thyme, salt, and pepper to taste.
- Add the sun-dried tomatoes and return the chicken to the skillet, spooning sauce over the top.
- Simmer for another 5 minutes until the sauce thickens and the chicken is heated through.
- Garnish with fresh basil and serve warm over pasta, rice, or vegetables.
Notes
- Use freshly grated parmesan cheese for the best texture and flavor.
- Do not substitute heavy cream with light cream, as the sauce will not thicken properly.
- Add a splash of chicken stock when reheating leftovers to loosen the sauce.
- Sun-dried tomato oil can be used for extra flavor when sautéing the garlic.
