Description

Loaded Breakfast Nachos are a hearty, cheesy, and flavor-packed breakfast dish featuring layers of tortilla chips, savory sausage, melted cheddar, spicy jalapeños, and perfectly baked eggs. Topped with sour cream and fresh cilantro, this one-skillet meal is ideal for brunch, family gatherings, or late-night comfort food cravings.

Ingredients

Scale
  • 1 bag tortilla chips – crispy base for layering
  • 1 pound pork breakfast sausage – adds savory richness
  • 3 cups marbled cheddar cheese – for a melty, cheesy texture
  • 1/4 cup red onion, finely diced – provides color and sharp flavor
  • 1 medium jalapeño, sliced – adds a spicy kick
  • 6 eggs – create a hearty breakfast element
  • 1/4 cup sour cream – adds creaminess and balances spice
  • 1/4 cup fresh cilantro leaves, chopped – adds freshness
  • Salt and pepper, to taste – enhances flavor

Instructions

  1. Preheat your oven or grill to 350°F (175°C).
  2. In a 12-inch cast iron skillet, spread half the tortilla chips evenly.
  3. Top with half of the sausage, onions, jalapeños, and cheese.
  4. Repeat with the remaining ingredients to create a second layer.
  5. Use your hands to make six small pockets in the top cheese layer and crack one egg into each pocket.
  6. Season the eggs with salt and pepper to taste.
  7. Place the skillet in the oven or grill and bake for 20–25 minutes, or until egg whites are set and yolks remain slightly runny.
  8. Remove from heat and top with sour cream, fresh cilantro, and additional toppings as desired.
  9. Serve immediately while warm and melty.

Notes

  • Monitor the eggs closely to achieve your preferred doneness — ovens may vary.
  • Use a cast iron skillet for even heat and crispy cheese edges.
  • Customize with bacon, beans, or extra cheese for more variety.
  • Reheat leftovers in a 350°F oven for 8–10 minutes to maintain crispiness.
  • Perfect for outdoor cooking in a Dutch oven over hot coals.
