Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking sheet.
  2. In an electric mixer, whip the butter until smooth, then add sugar and beat until light and fluffy, about 5–8 minutes.
  3. In another bowl, whisk together flour, ground almonds, cinnamon, and nutmeg.
  4. Combine the dry ingredients with the butter mixture using a rubber spatula until fully incorporated.
  5. Divide dough into three portions. Place each between two sheets of wax paper, flatten slightly, and refrigerate for at least 10 minutes.
  6. Roll dough to about 1/8 inch thickness. Cut out 1 1/2-inch stars for bases and smaller stars from half of them for tops.
  7. Arrange cookies on a greased baking sheet and bake for 12–15 minutes, or until lightly golden.
  8. Cool cookies slightly before transferring to a wire rack.
  9. Warm raspberry jam in a small saucepan until just simmering, then cool slightly.
  10. Spoon a small amount of jam onto each base cookie, top with a cut-out star cookie, and dust with powdered sugar.
