  • 1 large bunch fresh parsley or rosemary, finely chopped (or a mix of both)

Instructions

  1. Place the chicken breasts in a refrigerator-safe container and drizzle with olive oil, tossing to coat evenly.
  2. Season the chicken with salt and black pepper, ensuring all pieces are well covered.
  3. Add the fresh lemon juice, minced garlic, and chopped herbs. Toss thoroughly so the marinade coats each piece completely.
  4. Cover tightly and refrigerate for 24–48 hours to allow the flavors to fully develop.
  5. Remove the chicken from the refrigerator 15–60 minutes before cooking to bring it closer to room temperature.
  6. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  7. Arrange the marinated chicken on the prepared baking sheet, skin side up, leaving space between pieces.
