  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon smoked paprika
  • 3/4 teaspoon fine sea salt (or to taste)

Instructions

  1. Heat 2 tablespoons olive oil in a large heavy-bottomed pot over medium heat. Add 2–3 popcorn kernels, cover, and wait until they pop to ensure the oil is hot.
  2. Add the remaining popcorn kernels in an even layer. Cover with a lid and shake the pot occasionally to prevent burning.
  3. Cook until the popping slows to about 2 seconds between pops. Remove from heat immediately and transfer the popcorn to a large mixing bowl.
  4. In a small bowl, combine lemon zest, garlic powder, dried parsley, thyme, oregano, smoked paprika, salt, and black pepper. Mix well.
  5. Lightly drizzle the warm popcorn with a small additional amount of olive oil if needed, tossing gently to help the seasoning adhere.
  6. Sprinkle the lemon herb seasoning over the popcorn in batches, tossing continuously to coat evenly.
  7. Taste and adjust salt or lemon zest as desired. Serve immediately while warm and crisp.
