  • 6 cups chicken broth (low-sodium preferred)
  • 1/4 teaspoon Italian seasoning
  • 1.5 pounds boneless skinless chicken breasts
  • 1 cup uncooked orzo pasta
  • 1 tablespoon fresh lemon juice (or more to taste)
  • 1 tablespoon fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Heat butter and olive oil in a large soup pot over medium-high heat. Add celery, carrots, and onion, and sauté for 5–7 minutes until softened.
  2. Stir in minced garlic and cook for about 30 seconds until fragrant. Add flour and cook for another minute, stirring constantly.
  3. Gradually pour in the chicken broth while stirring to dissolve the flour completely and create a smooth base.
  4. Add Italian seasoning and whole chicken breasts. Bring the soup to a gentle boil.
  5. Reduce heat, partially cover, and simmer for 15 minutes until the chicken is cooked through.
  6. Stir in the uncooked orzo pasta and cook for 8–10 minutes, stirring frequently, until al dente.
  7. Remove the chicken, cut into bite-sized pieces, and return it to the pot.
  8. Stir in fresh lemon juice and chopped parsley. Season with salt and black pepper to taste.
  9. Serve hot, adding extra lemon juice if desired.

  • Cook orzo separately if making ahead to prevent it from absorbing too much broth.
