  • 1 1/2 cups granulated sugar
  • 1 1/2 cups packed light brown sugar
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 3 cups old-fashioned rolled oats
  • 2 cups semisweet chocolate chips
  • 2 cups sweetened flaked coconut
  • 1 1/2 cups chopped toasted pecans

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  3. In a large mixing bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the flour mixture to the butter mixture, mixing until just combined.
  6. Fold in the oats, chocolate chips, coconut, and pecans until evenly distributed.
  7. Drop dough by heaping tablespoons (or use a 1/4 cup scoop for large cookies) onto prepared baking sheets, leaving space between cookies.
  8. Bake for 17–20 minutes, or until the edges are golden brown and the centers are just set.
  9. Let cookies cool on the baking sheet for 2–3 minutes before transferring to a wire rack to cool completely.
