- 1 cup unsweetened creamy peanut butter
- 1/2 cup butter
- 1/2 tsp vanilla extract
- 3/4 cup powdered Swerve Sweetener
- 1/3 cup collagen peptides (optional, or increase sweetener if not using)
Instructions
- Line an 8×4 inch or 5×9 inch loaf pan with waxed or parchment paper, allowing the paper to hang over the sides for easy removal.
- In a medium saucepan over low heat, combine peanut butter and butter. Stir constantly until fully melted and smooth.
- Remove from heat and stir in vanilla extract.
- Whisk in powdered sweetener and collagen peptides until well blended and smooth.
- Pour the mixture into the prepared pan and smooth the top evenly.
- Refrigerate for about 1 hour, or until fully set.
- Lift the fudge from the pan using the paper edges and slice into 15 squares.
Notes
- Use no-stir peanut butter for best texture and consistency.
- If omitting collagen, add an additional 1/4 to 1/3 cup of powdered sweetener.
- Store at room temperature for up to 4 days, or in the fridge for several weeks.
- This fudge also freezes well for up to 3 months.
