  • 1 cup unsweetened creamy peanut butter
  • 1/2 cup butter
  • 1/2 tsp vanilla extract
  • 3/4 cup powdered Swerve Sweetener
  • 1/3 cup collagen peptides (optional, or increase sweetener if not using)

Instructions

  1. Line an 8×4 inch or 5×9 inch loaf pan with waxed or parchment paper, allowing the paper to hang over the sides for easy removal.
  2. In a medium saucepan over low heat, combine peanut butter and butter. Stir constantly until fully melted and smooth.
  3. Remove from heat and stir in vanilla extract.
  4. Whisk in powdered sweetener and collagen peptides until well blended and smooth.
  5. Pour the mixture into the prepared pan and smooth the top evenly.
  6. Refrigerate for about 1 hour, or until fully set.
  7. Lift the fudge from the pan using the paper edges and slice into 15 squares.

Notes

  • Use no-stir peanut butter for best texture and consistency.
  • If omitting collagen, add an additional 1/4 to 1/3 cup of powdered sweetener.
  • Store at room temperature for up to 4 days, or in the fridge for several weeks.
  • This fudge also freezes well for up to 3 months.
