- 2 cups plus 2 tablespoons bleached all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon fine salt
- 1 1/2 sticks (6 ounces) unsalted butter, melted and cooled slightly
- 1 cup packed light or dark brown sugar
- 1/2 cup granulated sugar
- 2 teaspoons pure vanilla extract
- 1 large egg
- 1 large egg yolk
- 1/2 cup dried sour cherries, roughly chopped
- 1/2 cup white chocolate chunks or chips
- 3/4 cup almond butter
- 1/4 cup confectioners’ sugar
- 1/4 cup unsalted butter, softened
- 1/8 teaspoon fine salt (for filling)
Instructions
- Preheat the oven to 325°F (163°C) and line two baking sheets with parchment paper.
- In a small bowl, whisk together the flour, baking soda, and salt.
- In a stand mixer, beat the melted butter with brown and granulated sugars until smooth.
- Add vanilla extract, egg, and egg yolk, mixing until incorporated.
- Gradually add the dry ingredients to the wet mixture, stirring until combined.
- Fold in the dried cherries and white chocolate chunks until evenly distributed.
- Scoop 1 tablespoon of dough, roll into balls, and split into two halves to make sandwich pairs.
- Place dough balls 2 inches apart on the baking sheets and bake for 12–15 minutes, or until the edges are lightly golden.
- Cool cookies on the sheets for 20–30 minutes.
- In a medium bowl, beat almond butter, confectioners’ sugar, softened butter, and a pinch of salt until light and fluffy.
- Spread about 1 tablespoon of the filling onto the flat side of one cookie, then top with another cookie to make a sandwich.
- Repeat with the remaining cookies and enjoy.
Notes
- Chill dough before baking to prevent excessive spreading.
- Do not overbake; cookies will continue to firm up as they cool.
- For stronger almond flavor, add a few drops of almond extract to the filling.
- Store filled cookies in an airtight container for up to 3 days or freeze unfilled cookies for up to 2 months.
