Description

Jeff Mauro’s Cherry White Chocolate Almond Sandwich Cookies combine chewy cherry-studded cookies with creamy almond butter filling, delivering a perfect blend of sweet, nutty, and tart flavors. These sandwich cookies are easy to make, impressive to serve, and ideal for holidays or any special occasion.


Ingredients

  • 2 cups plus 2 tablespoons bleached all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine salt
  • 1 1/2 sticks (6 ounces) unsalted butter, melted and cooled slightly
  • 1 cup packed light or dark brown sugar
  • 1/2 cup granulated sugar
  • 2 teaspoons pure vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 1/2 cup dried sour cherries, roughly chopped
  • 1/2 cup white chocolate chunks or chips
  • 3/4 cup almond butter
  • 1/4 cup confectioners’ sugar
  • 1/4 cup unsalted butter, softened
  • 1/8 teaspoon fine salt (for filling)

Instructions

  1. Preheat the oven to 325°F (163°C) and line two baking sheets with parchment paper.
  2. In a small bowl, whisk together the flour, baking soda, and salt.
  3. In a stand mixer, beat the melted butter with brown and granulated sugars until smooth.
  4. Add vanilla extract, egg, and egg yolk, mixing until incorporated.
  5. Gradually add the dry ingredients to the wet mixture, stirring until combined.
  6. Fold in the dried cherries and white chocolate chunks until evenly distributed.
  7. Scoop 1 tablespoon of dough, roll into balls, and split into two halves to make sandwich pairs.
  8. Place dough balls 2 inches apart on the baking sheets and bake for 12–15 minutes, or until the edges are lightly golden.
  9. Cool cookies on the sheets for 20–30 minutes.
  10. In a medium bowl, beat almond butter, confectioners’ sugar, softened butter, and a pinch of salt until light and fluffy.
  11. Spread about 1 tablespoon of the filling onto the flat side of one cookie, then top with another cookie to make a sandwich.
  12. Repeat with the remaining cookies and enjoy.

Notes

  • Chill dough before baking to prevent excessive spreading.
  • Do not overbake; cookies will continue to firm up as they cool.
