  • 20 caramels, unwrapped – create the gooey caramel layer
  • 1 tbsp milk – softens and smooths the caramel
  • 2 cups (400g) milk chocolate chips – for the classic Twix chocolate topping

Instructions

  1. Preheat oven to 350°F (175°C). In a mixer, cream together the butter and sugar until light and fluffy.
  2. Add the vanilla extract and egg white. Mix until well combined.
  3. In a separate bowl, whisk together flour and baking powder. Gradually add to the wet mixture until a soft dough forms.
  4. Roll out dough to 1/4–1/2 inch thickness. Cut circles with a cookie cutter and place them on an ungreased baking sheet.
  5. Bake for 6–8 minutes or until cookies are puffy and no longer glossy. Cool completely on a wire rack.
  6. While cooling, microwave the caramels and milk in 30-second intervals until smooth. Stir until fully melted.
  7. Spoon a teaspoon of caramel onto each cookie and spread evenly. Chill in the refrigerator for 10–15 minutes to set.
  8. Melt the milk chocolate chips in 30-second intervals, stirring until smooth. Spread a thin layer over the caramel.
  9. Allow chocolate to set at room temperature or refrigerate briefly before serving.

Notes

  • Do not overbake—the cookies should stay soft and pale.
  • Refrigerate cookies after adding caramel for clean layering.
  • Use dark or semi-sweet chocolate for a richer variation.
