Homemade Meatloaf with Gravy: The Ultimate Comfort Food Classic

  • Author: Alice Barry
  • Total Time: 1 hour 10 minutes
  • Yield: 6 servings (2 slices + 1/3 cup gravy each) 1x
  • Diet: Low Fat

Description

This Homemade Meatloaf with Gravy is the ultimate comfort food classic — a tender, flavorful blend of lean ground beef and turkey, seasoned perfectly and smothered in rich, savory brown gravy. It’s hearty, wholesome, and ideal for family dinners or meal prep.

Ingredients

Scale
  • 1 ½ teaspoons olive oil – adds richness and helps soften the onions
  • 1 medium onion, chopped – provides natural sweetness and flavor depth
  • 2 garlic cloves, minced – enhances the savory aroma
  • 2 large eggs – bind the meat mixture
  • 1 lb 95% lean ground beef – adds traditional beefy flavor
  • 1 lb 99% lean ground turkey breast – keeps the loaf lean and moist
  • 2/3 cup plain breadcrumbs – absorb moisture and maintain structure
  • 1 tablespoon Worcestershire sauce – brings tangy umami flavor
  • ¾ teaspoon salt – balances flavor
  • ¾ teaspoon dried thyme – adds herbal warmth
  • ¼ teaspoon black pepper – provides subtle spice
  • 4 tablespoons light butter – base for the gravy
  • ¼ cup all-purpose flour – thickens the gravy
  • 2 cups reduced sodium beef broth – gives body and savory depth to gravy
  • 1 teaspoon Better Than Bouillon Beef base – boosts rich, beefy flavor
  • ½ teaspoon Gravy Master seasoning & browning sauce (or Kitchen Bouquet) – deepens color and flavor

Instructions

  1. Preheat the oven to 350°F (175°C) and line a sheet pan with foil. Lightly mist with cooking spray.
  2. Heat olive oil in a skillet over medium heat. Add onions and cook for 3–5 minutes until soft. Stir in garlic and cook another 30 seconds. Remove from heat and cool slightly.
  3. In a large bowl, whisk eggs, then add ground beef, ground turkey, breadcrumbs, Worcestershire sauce, salt, thyme, pepper, and cooked onion mixture. Mix gently until combined.
  4. Transfer mixture to the prepared baking sheet and form into a 9×5-inch loaf. Bake for 45–55 minutes or until internal temperature reaches 160°F (71°C).
  5. While the meatloaf bakes, melt butter in a medium saucepan over medium heat. Whisk in flour gradually and cook for 2 minutes.
  6. Slowly pour in beef broth while whisking constantly to prevent lumps. Add Better Than Bouillon and Gravy Master, continuing to whisk until the gravy thickens and begins to boil.
  7. Remove gravy from heat and let rest for 5 minutes to thicken further.
  8. Slice the meatloaf into 12 slices. Serve two slices per portion, topped with 1/3 cup of warm gravy.

Notes

  • Do not overmix the meat mixture to avoid a dense texture.
  • Allow meatloaf to rest before slicing for best results.
  • Gravy can be made ahead and reheated before serving.
  • Store leftovers with a bit of gravy to keep them moist.
  • Pair with mashed potatoes and green beans for a classic comfort meal.
