  • 3 tablespoons all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons olive oil (more as needed)
  • 1 onion, chopped
  • 6 cups beef broth
  • 1/2 cup red wine (optional)
  • 1 pound potatoes, peeled and cubed
  • 4 carrots, cut into 1-inch pieces
  • 4 ribs celery, cut into 1-inch pieces
  • 3 tablespoons tomato paste
  • 1 teaspoon dried rosemary or 1 sprig fresh
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 3/4 cup peas

Instructions

  1. Combine flour, garlic powder, salt, and pepper. Toss beef cubes in this mixture to coat evenly.
  2. Heat olive oil in a large Dutch oven or heavy pot over medium-high heat. Brown the beef in small batches, then remove and set aside.
  3. Add onions to the same pot, cooking until softened, about 3 minutes.
  4. Pour in beef broth and red wine, scraping up brown bits from the bottom of the pot.
  5. Return beef to the pot along with potatoes, carrots, celery, tomato paste, and rosemary. Reduce heat, cover, and simmer for 1 to 1½ hours until beef is tender.
  6. Mix cornstarch and water to make a slurry, then gradually add to the bubbling stew until thickened to desired consistency.
  7. Stir in peas and simmer for an additional 5–10 minutes. Season with salt and pepper to taste before serving.

Notes

  • If your beef isn’t tender after 60 minutes, simmer for an additional 15–20 minutes.
  • Use Yukon gold or red potatoes for better texture retention.
  • The stew thickens naturally with potatoes, but slurry can enhance the consistency.
  • Store leftovers in airtight containers for up to 4 days or freeze for up to 3 months.
