Instructions
- Preheat oven to 425°F (220°C) and line a baking tray with parchment paper or lightly grease with oil.

- In a large bowl, add the potato cubes and strain the infused oil over them.

- Spread the seasoned potatoes in a single layer on the prepared baking tray.
- Bake for 40 minutes, turning halfway through, until crispy and golden brown.
- Remove from the oven and garnish with chopped fresh coriander leaves before serving.
