  • 1 tbsp fresh coriander leaves, chopped – brightens and freshens the finish

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking tray with parchment paper or lightly grease with oil.
  2. In a pan, heat olive oil over medium heat. Add minced garlic, fresh herbs, and dried Italian herbs. Fry until the garlic turns golden and aromatic.
  3. In a large bowl, add the potato cubes and strain the infused oil over them.
  4. Season with salt, black pepper, and red chili flakes. Toss until evenly coated.
  5. Spread the seasoned potatoes in a single layer on the prepared baking tray.
  6. Bake for 40 minutes, turning halfway through, until crispy and golden brown.
  7. Remove from the oven and garnish with chopped fresh coriander leaves before serving.
