Scale
  • 4 cups cooked chicken breast, shredded
  • 1 cup celery, finely chopped
  • 1/2 cup white onion, finely chopped
  • 1/4 cup fresh parsley, diced
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons green onion (green parts only), sliced
  • 3/4 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1012 large lettuce leaves (romaine, butter lettuce, or iceberg)

Instructions

  1. In a small mixing bowl, whisk together the mayonnaise, apple cider vinegar, salt, and black pepper until smooth and well combined.
  2. Place the shredded cooked chicken breast into a large mixing bowl.
  3. Add the chopped celery, diced white onion, sliced green onion, fresh parsley, and fresh dill to the bowl with the chicken.
  4. Pour the prepared dressing over the chicken mixture.
  5. Gently mix until all ingredients are evenly coated with the creamy herb dressing.
  6. Taste the chicken salad and adjust seasoning if needed with additional salt or pepper.
  7. Wash and thoroughly dry the lettuce leaves to keep them crisp.
  8. Arrange the lettuce leaves on a serving platter to create the lettuce boats.
  9. Spoon generous portions of the herb chicken salad mixture into the center of each lettuce leaf.
  10. Serve immediately and enjoy the fresh Herb Chicken Salad Lettuce Boats.

Notes

  • Shredded chicken works better than cubed chicken because it absorbs the dressing more evenly.
  • Rotisserie chicken can be used as a convenient shortcut for this recipe.
  • For a lighter version, replace part of the mayonnaise with plain Greek yogurt.
  • Store the chicken salad in an airtight container in the refrigerator for up to 4–5 days.
  • Keep the lettuce leaves separate until serving to prevent them from becoming soggy.
  • Add grapes, diced apples, or chopped nuts for extra texture and flavor variation.
