  • 1 pound ground turkey
  • 2 medium zucchini – diced into ½ inch pieces
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large baking dish (9×13 inch), add diced sweet potatoes and onions. Toss with 2 tablespoons olive oil, smoked paprika, Italian seasoning, garlic powder, salt, and pepper.
  3. Bake for 30 minutes until the sweet potatoes begin to soften.
  4. While the vegetables are baking, heat a skillet over medium heat. Add the remaining tablespoon of olive oil, then cook the ground turkey for 4–5 minutes until browned.
  5. Remove the baking dish from the oven and add the browned turkey and diced zucchini. Stir to combine evenly.
  6. Top with shredded mozzarella cheese, cover with aluminum foil, and bake for 15 minutes.
  7. Remove the foil and bake an additional 5 minutes until the cheese is bubbly and golden.
  8. Garnish with chopped parsley and a squeeze of lemon juice before serving.
