Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large 14-inch skillet over medium-high heat.
  3. Add ground turkey and cook for 3-4 minutes, breaking it up with a spoon until mostly browned.
  4. Add diced bell pepper and scallions, and cook for another 3-4 minutes until softened.
  5. Stir in cauliflower rice, spinach or kale, marinara sauce, garlic powder, onion powder, salt, and black pepper.
  6. Cook, stirring, until spinach wilts and everything is well combined.
  7. Reduce heat to low and stir in cream cheese until melted and evenly mixed.
  8. Transfer the mixture to a medium 3-quart casserole dish.
  9. In a small bowl, combine mozzarella, parmesan, and everything bagel seasoning.
  10. Sprinkle the cheese mixture evenly over the top of the casserole.
  11. Bake for 18–20 minutes or until cheese is bubbly and golden brown.
  12. Let cool for 5–10 minutes before serving.
