Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large 14-inch skillet over medium-high heat.
- Add ground turkey and cook for 3-4 minutes, breaking it up with a spoon until mostly browned.
- Add diced bell pepper and scallions, and cook for another 3-4 minutes until softened.
- Stir in cauliflower rice, spinach or kale, marinara sauce, garlic powder, onion powder, salt, and black pepper.
- Cook, stirring, until spinach wilts and everything is well combined.
- Reduce heat to low and stir in cream cheese until melted and evenly mixed.
- Transfer the mixture to a medium 3-quart casserole dish.
- In a small bowl, combine mozzarella, parmesan, and everything bagel seasoning.
- Sprinkle the cheese mixture evenly over the top of the casserole.
- Bake for 18–20 minutes or until cheese is bubbly and golden brown.
- Let cool for 5–10 minutes before serving.
Notes
- You can substitute ground beef or chicken for ground turkey.
- Use fresh or frozen cauliflower rice; thaw frozen before using.
- If your everything bagel seasoning contains salt, stick with 1/2 tsp salt total.
- Store leftovers in an airtight container for up to 4 days in the refrigerator.
