  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon red chili flakes
  • 1/4 teaspoon kosher salt
  • 1/4 cup sliced pepperoncini peppers
  • 1/4 red onion, thinly sliced
  • 1 head iceberg lettuce, shredded
  • 16-ounce Italian loaf of bread
  • 1/2 pound thinly sliced provolone cheese
  • 1/2 pound thinly sliced ham
  • 1/4 pound thinly sliced soppressata salami
  • 1/4 pound thinly sliced Genoa salami
  • 6 deli-sized pepperoni slices
  • 2 ounces freshly grated Parmesan cheese
  • 1 large beefsteak tomato, sliced
  • Olive oil, salt, and pepper to taste

Instructions

  1. Whisk together mayonnaise, red wine vinegar, minced garlic, black pepper, oregano, red chili flakes, and salt until smooth.
  2. Add sliced pepperoncini and red onion to the dressing and mix until coated.
  3. Toss in shredded iceberg lettuce until evenly covered; set aside.
  4. Preheat the oven to 350°F (175°C). Slice the Italian loaf in half and remove most of the inside bread, leaving about 1/2 inch.
  5. Layer half of the provolone cheese on each bread half and bake for 4–5 minutes until melted.
  6. Add ham on one side, soppressata on the other, then top with Genoa salami and pepperoni. Bake again for 5 minutes to warm the meats and toast the bread.
  7. Remove from oven and sprinkle Parmesan cheese over the meats.
  8. Top with tomato slices, drizzle with olive oil, salt, and pepper.
  9. Spoon the prepared grinder salad over the tomatoes, add the top bread half, and gently press down.
  10. Cut into portions and serve immediately with extra grinder salad on the side.
