  • 2 large eggs
  • 3/4 cup pistachios, coarsely chopped
  • 2/3 cup dried cranberries
  • 12 ounces white chocolate, chopped
  • Red and green sugar crystals, for garnish

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour and baking powder.
  3. In a large bowl, beat sugar, butter, lemon zest, and salt until light and fluffy. Add eggs one at a time, mixing well after each addition.
  4. Add flour mixture to wet ingredients and blend until combined. Stir in pistachios and cranberries.
  5. Shape the dough into a 13-inch-long, 3-inch-wide log on the baking sheet. Bake for 40 minutes or until light golden. Cool for 30 minutes.
  6. Slice the log diagonally into 1/2- to 3/4-inch-thick pieces using a serrated knife. Arrange slices cut side down on the baking sheet and bake for 15 minutes or until crisp and golden. Cool completely.
  7. Melt white chocolate over a double boiler. Dip half of each biscotti into the melted chocolate and sprinkle with red and green sugar crystals.
  8. Refrigerate for 35 minutes until chocolate is firm. Store in an airtight container or freeze for later use.
