- 12 ounces white chocolate, chopped

Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour and baking powder.
- In a large bowl, beat sugar, butter, lemon zest, and salt until light and fluffy. Add eggs one at a time, mixing well after each addition.
- Add flour mixture to wet ingredients and blend until combined. Stir in pistachios and cranberries.
- Shape the dough into a 13-inch-long, 3-inch-wide log on the baking sheet. Bake for 40 minutes or until light golden. Cool for 30 minutes.
- Slice the log diagonally into 1/2- to 3/4-inch-thick pieces using a serrated knife. Arrange slices cut side down on the baking sheet and bake for 15 minutes or until crisp and golden. Cool completely.
- Melt white chocolate over a double boiler. Dip half of each biscotti into the melted chocolate and sprinkle with red and green sugar crystals.
- Refrigerate for 35 minutes until chocolate is firm. Store in an airtight container or freeze for later use.
