  • 1 stick (8 tablespoons) unsalted butter, at room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup creamy peanut butter
  • 1 teaspoon pure vanilla extract
  • 1 large egg
  • Nonstick cooking spray
  • 1/2 cup blue and white nonpareil sprinkle mix
  • 18 to 20 chocolate gelt candies, unwrapped and frozen

Instructions

  1. Whisk together the flour, baking soda, and salt in a medium bowl until combined.
  2. In a stand mixer, beat butter, granulated sugar, and brown sugar on medium-high speed until light and fluffy, about 5 minutes.
  3. Add the peanut butter and beat until fluffy, then add vanilla and egg; mix until fully combined.
  4. Gradually add the dry ingredients on low speed until a soft dough forms. Cover and refrigerate for at least 1 hour or overnight.
  5. Preheat oven to 350°F (175°C) and lightly grease a baking sheet with nonstick spray.
  6. Roll chilled dough into 1 1/2 tablespoon-sized balls and coat with blue and white sprinkles.
  7. Place dough balls 2 inches apart on the baking sheet and bake for about 12 minutes, rotating halfway through.
  8. Immediately press a chocolate gelt into the center of each cookie while warm.
  9. Cool cookies for 10 minutes on the baking sheet, then transfer to a wire rack to cool completely.
  10. Repeat the process with the remaining dough and sprinkles.

  • Use creamy commercial peanut butter for best results; natural peanut butter may cause oily dough.
  • Chill dough to prevent cookies from spreading too much during baking.
