  • 1 1/4 lb sirloin steak, cut into 1/2 inch cubes: juicy and tender protein source

Instructions

  1. Heat a large cast iron skillet over medium heat. Add olive oil and 2 tablespoons of ghee.
  2. Once melted, add the potatoes. Sprinkle with garlic, thyme, oregano, salt, and pepper.
  3. Cook the potatoes for 2–3 minutes undisturbed, then stir every 1–2 minutes until golden brown and fork-tender, about 8–10 minutes. Remove and set aside.
  4. Increase heat to medium-high and add the remaining 2 tablespoons of ghee to the pan.
  5. Add steak bites in a single layer and season with salt and pepper. Sear for at least 2 minutes before stirring.
  6. Continue cooking for another 1–2 minutes until browned and cooked to desired doneness.
  7. Return the potatoes to the pan and stir everything to combine.
  8. Taste and adjust seasoning as needed. Garnish with chopped parsley and serve hot.

  • Use small, uniform potato pieces for even cooking.
  • Don’t overcrowd the skillet—cook in batches if needed.
  • A cast iron pan gives the best sear and texture.
