Instructions
- Heat a large cast iron skillet over medium heat. Add olive oil and 2 tablespoons of ghee.
- Once melted, add the potatoes. Sprinkle with garlic, thyme, oregano, salt, and pepper.
- Cook the potatoes for 2–3 minutes undisturbed, then stir every 1–2 minutes until golden brown and fork-tender, about 8–10 minutes. Remove and set aside.
- Increase heat to medium-high and add the remaining 2 tablespoons of ghee to the pan.
- Add steak bites in a single layer and season with salt and pepper. Sear for at least 2 minutes before stirring.
- Continue cooking for another 1–2 minutes until browned and cooked to desired doneness.
- Return the potatoes to the pan and stir everything to combine.
- Taste and adjust seasoning as needed. Garnish with chopped parsley and serve hot.
