  • Diet: Vegetarian

Description

These Fudgy Brownies are rich, chewy, and irresistibly chocolatey with a shiny, crackly top and moist, dense center. Made in one saucepan with simple ingredients, this easy brownie recipe guarantees bakery-quality results every time.

Ingredients

Scale
  • 10 tablespoons (145g) unsalted butter
  • 1 ¼ cups (250g) granulated sugar
  • ¾ cup plus 2 tablespoons (75g) unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • ¼ teaspoon fine sea salt
  • 2 large cold eggs
  • ½ cup (65g) all-purpose flour
  • ⅔ cup (80g) chopped walnuts, pecans, or chocolate chips (optional)

Instructions

  1. Preheat oven to 325°F (162°C). Line an 8-inch square baking pan with parchment paper or foil, leaving an overhang for easy removal.
  2. Melt butter in a medium saucepan over medium-low heat. Remove from heat once melted.
  3. While butter is hot, stir in sugar, cocoa powder, vanilla extract, and salt until well blended.
  4. Allow the mixture to cool for 5–10 minutes until warm but not hot to the touch.
  5. Add eggs one at a time, stirring vigorously after each addition until smooth and glossy.
  6. Stir in flour and beat the batter about 40–50 strokes until thick and slightly pulling away from the sides of the pan.
  7. Fold in nuts or chocolate chips if desired.
  8. Spread batter evenly in the prepared pan and bake for 20–30 minutes until edges are set but the center remains slightly underbaked.
  9. Cool completely in the pan before slicing into squares. For cleaner cuts, refrigerate for 1–2 hours before slicing.

Notes

  • Do not overbake; brownies continue to cook as they cool.
  • Use natural cocoa powder for rich flavor or Dutch-processed for a milder, smoother taste.
  • Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
  • Use a metal pan for best results; baking times may vary with glass or ceramic.
  • Beat the flour in vigorously to emulsify butter and create a glossy, fudgy texture.
