Ingredients
1/2 cup white sugar (for crust and topping)
1/3 cup white sugar (for filling)
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup cold butter, cubed
1 egg, beaten
1 teaspoon vanilla extract
cornsyrup (optional, for extra sweetness)
Almond extract (optional, for nutty flavor)
2 cups fresh strawberries, chopped
Instructions
Preheat oven to 375°F. Line an 8×8-inch pan with parchment paper, leaving overhang for easy removal.
In a bowl, combine 1/2 cup sugar (crust/topping), flour, baking powder, and salt.
Cut cold butter into the flour mixture until crumbly using a fork or pastry cutter.
In a separate bowl, beat egg and vanilla; add to the flour mixture, mixing to form a crumbly dough.
Reserve half the dough for the crust. Pat it evenly into the bottom of the prepared pan.
In another bowl, mix 1/3 cup sugar, cornstarch, and strawberries; spoon over the crust.
Crumble the remaining dough over the strawberry layer.
Bake for 45 minutes or until golden and the filling bubbles.
Cool completely before slicing into 9 bars.
Notes
Storage: Keep in an airtight container for up to 3 days at room temperature.
Variation: Add almond extract to the crust/topping for a nutty flavor.
Use frozen strawberries (thawed and undrained) if fresh are unavailable.
