Instructions

  1. Place marshmallows in the freezer for at least 30 minutes to keep them firm during frying.
  2. Heat 3–4 inches of canola oil in a heavy pot or deep fryer to 375°F, monitoring with a candy thermometer.
  3. In a small bowl, whisk together milk, egg, and vanilla extract.
  4. In a large bowl, add the pancake mix and create a well in the center. Pour in the milk mixture and whisk gently, leaving the batter slightly lumpy.
  5. Coat a few frozen marshmallows completely in the batter using your fingers.
  6. Carefully drop the coated marshmallows into the hot oil. Fry for 25–30 seconds per side, or until golden brown.
