  • 1 sweet onion, chopped

  • 4 cups water or chicken/vegetable broth
  • 2 pounds collard greens, trimmed and chopped
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon brown sugar
  • Pepper vinegar, for serving (optional)

Instructions

  1. Place the smoked ham hock, chopped onion, red pepper flakes, kosher salt, collard greens, apple cider vinegar, and brown sugar into the Crock Pot.
  2. Stir gently to combine the ingredients.
  3. Cover and set the slow cooker to high heat.
  4. Cook for 4 to 6 hours, or until the collard greens are tender and the pot likker is rich and flavorful.
  5. Remove the ham hock, shred the meat, discard the bones, and return the meat to the pot.
  6. Taste the greens and adjust seasoning with additional salt, pepper, sugar, or vinegar if desired.
  7. Serve with a splash of pepper vinegar for a traditional Southern touch.
