Instructions

  1. Preheat oven to 400°F (200°C). Scrub and wash potatoes thoroughly, then place them directly on a baking sheet without foil.
  2. Bake potatoes for 1 hour until tender. Remove and let cool slightly.
  3. Slice potatoes in half lengthwise. Scoop out the centers, leaving about 1/2 inch of potato attached to the skin.
  4. Brush both sides of each potato skin with melted butter and place back on the baking sheet.
  5. Bake for 10 minutes, flip, and bake another 10 minutes until golden and crisp.
  6. Flip potato skins skin-side down. Fill each with cheddar cheese and bacon bits.
  7. Return to oven and bake for 3–5 minutes, or until cheese is fully melted.
  8. Sprinkle with chopped green onions, season with salt if needed, and serve hot with sour cream on the side.
